A restaurant that cleans well every night has fewer surprises during the day. Grease, food debris, and moisture build up quickly, and a missed task on Monday becomes a problem by Friday. This guide separates what belongs on the nightly closing list from what belongs on a weekly rotation.
Follow your local health department rules and your facility's own procedures. What is required varies by city and state, and this list is a general starting point, not a substitute for those requirements.
Every night: kitchen
- Cooking surfaces: scrape, clean, and wipe griddles, flat-tops, and the outside of fryers according to manufacturer guidance.
- Prep surfaces: wash, rinse, and sanitize cutting boards, prep tables, and shelves using an approved sanitizer at the correct strength.
- Sinks: clean and sanitize hand sinks, prep sinks, and dish sinks. Clear the drain strainers.
- Equipment exteriors: wipe ovens, ranges, refrigerator doors, handles, and reach-in gaskets.
- Floors: sweep, then mop with a degreasing cleaner. Move mats and clean under them.
- Floor drains: remove debris and rinse.
- Trash and grease: empty trash, replace liners, and clean the bins if they are dirty. Handle grease according to your hauler and local rules.
Every night: front of house
- Clear and wipe tables, chairs, and booths, including the edges and undersides where food collects.
- Sanitize menus if they are reusable, or replace them.
- Wipe condiment holders and refill them.
- Sweep and mop dining room floors, moving chairs as needed.
- Clean the host stand, POS stations, and payment terminals with a product safe for electronics.
- Wipe door handles and entry glass.
Every night: restrooms
- Clean and disinfect toilets, sinks, counters, and touch points.
- Restock soap, towels, and paper.
- Empty trash and mop the floor.
Every night: bar and service areas
- Clean bar tops, wells, and speed rails.
- Rinse and sanitize soda guns and drain trays.
- Clean the ice bin's exterior and check the scoop is stored correctly.
- Empty and clean drip trays.
Weekly deep cleaning
These tasks take more time and often more equipment. Schedule them on a slower night or during a closed period.
Kitchen
- Deep clean the inside of refrigerators and freezers, and rotate stock while doing it.
- Clean behind and under movable equipment where grease and debris hide.
- Degrease walls, backsplashes, and the lower parts of hood surfaces you can reach.
- Clean shelving, wipe cans and containers, and check for expired items.
- Descale or clean items like coffee machines and dish machines according to the manufacturer's instructions.
Front of house
- Vacuum upholstered seating and carpets, or spot clean any stains.
- Wipe baseboards, window sills, and vents.
- Machine scrub tile or hard floors to lift grease that mopping leaves behind. See our floor care basics post for more on this.
- Dust decor, light fixtures, and shelving.
Restrooms
- Scrub grout and floor corners.
- Descale faucets and clean partitions and vents.
Tasks that are not weekly
Exhaust hood and duct cleaning is normally handled by a qualified specialist on a schedule set by fire codes and your insurer. Grease trap service, pest control, and fire suppression checks are also handled by licensed providers. General cleaning crews do not replace these services, so keep those appointments on your calendar.
Make the list usable
- Print the list and post it in the kitchen and at the manager station.
- Assign each task to a role, not just "the closer."
- Have the manager initial a sign-off at the end of every night.
- Do a quick walk-through with a flashlight to check corners and under equipment.
